I am planning on making some lemon marmalade but some of the lemons have been hit by what looks like sooty mould

if I clean the mould off are they safe to use in a marmalade?

I think the use of these lemons is a personal choice. Have scrubbed the lemons and used them in marmalade myself when they have what looks like sooty mould. I tended to think that with the longer cooking time and high heat there wasn't a problem and haven't had any problems with the marmalade myself. Saying this though the quality of your marmalade is dependent on the quality of your fruit. The use of your fruit like this and the keeping quality would also depend on how soon you will use it. I always put my marmalde or fruit jams that were/are suspect at the front to be used first.

While I have used them; I think I tend to err on the side of caution these days and would use these types of fruits for their juice rather than use them in preserves. So yes I have done so in the past but this was when I didn't have access to lots of fruit or couldn't afford to buy it etc. These days I have my own fruit trees and being older and wiser am more cutious.

think youve convinced me, those dodgey fruit will end up as fresh juicers and only the unblemished will end up in the marmalade

do you have an easy lemon marmalade?
Lemons are just starting to yellow up and have heaps of limes (my son keeps nicking them to put in his Coronas!).

Here's the recipe I used for my first few fruit - all perfect fruit and the recipe is so easy

Ingredients

I kg thinned skinned lemons (about 4)
1 and 1/4 litres boiling water
1.6 kg sugar
Method:

Halve the lemons lengthwise and slice very thinly. Aim to have slices 2 mm wide or less. As you slice you need to remove all the seeds.


Place the lemon slices in a large heat proof bowl and pour over the boiling water. Stand for 24 hours.

Pour contents of bowl into a large saucepan and bring to the boil. Reduce the heat and cook for one hour without the lid on the pan.

Add the sugar and gently bring back to the boil, stirring as the sugar dissolves. Again, don't place the lid on the pot. Remove any scum if it appears on the surface of the marmalade. Boil for 30 minutes, carefully and occasionally stirring.

Place a teaspoonful of the hot marmalade on a cold saucer. Pop the saucer in the fridge for 10 minutes. After 10 minutes tip the saucer to one side. If the marmalade wrinkles on the surface then it is ready for bottling. If it doesn't wrinkle then boil for a few minutes longer and try again.

Carefully pour into hot jars. Seal whilst hot.

Makes 4 - 5 jars.

Notes:

If you have very thick skinned lemons you may have to remove the yellow skin, slice it very thinly and then discard a heap of the white pith from under the skin. If you throw out a lot of pith you will need to adjust the quantities of sugar and water to keep everything in balance.

Pouring boiling water on the lemons and then standing them for 24 hours softens up the skins.

I do have a nice Tasty Lemon Marmalade. I see that Fuita holic has kindly shared hers with you. Which begs me to ask Fruitaholic, could you please also put this recipe over on the recipe section?

Oh I am so very sorry and apologise, I wasn't aware. One of the reason why I don't like these names and prefer signatures :lol: Haven't looked in the recipe section for sometime at all the recipes so I guess I should go and look first as well.

Oh I just went and had a look at that address, vanilla - I would love to grow a vanilla vine but think it will be too cold down here in the wouth of WA. Maybe I will give it a go once I am more established and have sussed out an area for one with a good microclimate but for now shall have to be content with all the vanilla pods I bought in bulk.

I sued to play one of those on line war games and occassionally would be woman for the game - lots of laughs when the innevitable sexism started LOL

vanilla can be grown ina good microclimate - but it is very tropical - mine is more or less dormant at the moment - because of our "cold" weather - on the sunshine coast
