How do you make it, with juice or dry the zest?

I imagine that would have the bearing of how long you could store it???

Interesting...

I have made various peppers/dried seasonings myself from dried foods and have found that for a good flavour they last about a year in a sealed container. Have found that after 12-18 months their flavour is still good although doesn't seem to be as strong as it was when I first made them. Hope that helps.

I have been drying the zest and then cracking the pepper and mixing I have made some more this morning and put in sealed jars (the lock down type with rubber seal ) but the flavors are great

It's something I hadn't thought of doing, but sounds great... on my list of to do when I move and get organised.

Thank you
